Winter Dahl Recipe

The recipe I'm really proud of

Colder weather is calling for warmer meals! The below is my take on a dahl recipe, I’m very proud of this one as it tastes divine and you only need basic ingredients.

Ingredients

To make 6 portions, you will need:

  • 1 tbsp of coconut oil
  • 1 tbsp of curry powder
  • 150 g onion chopped
  • 3 garlic cloves crushed and chopped
  • 150 g carrots peeled and grated
  • 200 g cauliflower floret chopped
  • 200 g red lentils
  • 1 can of coconut milk
  • 400 ml boiled hot water
  • Juice of 1 lime
  • 1 tsp of honey
  • 1 tsp of mustard
  • 1 tbsp nutritional yeast

Directions

  • Melt coconut oil in a pot on medium heat
  • Add curry powder, garlic, onion and cook for a couple of minutes until softened
  • Add carrots, cauliflower, lentils, coconut milk, water and stir
  • Add lime juice, honey, mustard, and yeast, and stir
  • Cover with a lid and cook on medium-low heat for 30 minutes until cooked and soft, stir occasionally

How to make a more balanced meal

I like to serve it with different sides to make a meal as interesting as possible:

  • Whole grains: bulgur wheat, rice, buckwheat, quinoa would work well
  • Vegetables: broccoli, baked potato, fresh coriander, chilli
  • Yogurt: greek or coconut if you want a vegan meal

Dietary information

So per portion of dahl, we would have:

198 calories, 13.5 g fat, 14 g carbohydrates, 5 g protein, 4 g fiber
