Balanced Pancakes

Pancake Constructor

When it comes to pancakes I hate to follow recipe instructions, so over the years I came up with this easy to memorise constructor. It’s also great as it can be adapted based on what ingredients you have, as long as you have cottage cheese, quark, or skyr.

Ingredients

For six portions:


  • 300 g cottage cheese
  • 50 g plain flour for every 100 g of cheese or 25 g plain flour and 25 g oatmeal
  • ½ tsp cinnamon for every 100 g of cheese
  • 1 egg for every 75 g of cheese or 1 egg and 1 banana for every 150 g cheese
  • 1 tbsp peanut butter for every 100 g of cheese (optional)
  • olive oil spray
  • pinch of salt

Directions

  • Spray the pancake pan with olive oil and put on the medium heat
  • Mix together all the ingredients you are using
  • Use a big spoon to drop the batter on the pan (makes 4 pancakes on a standard pan)
  • Fry for 4-5 minutes on each side on medium heat
  • Serve together with fruits, berries, yogurt, nut butters, syrups

Dietary information

So the above recipe has per portion:

200 calories, 5 g fat, 28 g carbohydrates, 5 g sugar, 3 g fiber, 12 g protein.

Try it! Since I’ve developed this constructor, there are no ‘what goes into pancakes’ dramas in our kitchen anymore. Also as we are using cottage cheese in this recipe, we get a more balanced and filling meal.
