Simple Shakshuka Recipe

Shakshuka is easy

This shakshuka recipe is just perfect, it’s a filling and balanced meal. Normally we cook it when there are no fresh vegetables at home, as it’s a great way to use up onions, garlic, and frozen peppers.

Ingredients

For 2-3 people:

  • 1 white onion, peeled and diced
  • 3 garlic cloves, diced
  • 3 peppers of different colours chopped (I use already chopped frozen multi-colour peppers)
  • 1 can of tomatoes (400 g)
  • salt and pepper to taste
  • 4 eggs
  • ½ tsp cumin if you have
  • ½ tsp chilli powder if you have
  • olive oil spray
  • fresh coriander if you like

Directions

  • On medium heat, warm up the pan with olive oil spray
  • Add onions, garlic, spices if using and saute until onions are golden
  • Add peppers and saute for another 6 minutes
  • Add tomato sauce and cook for another 3-4 minutes
  • With a big spoon make dents for the eggs
  • Break the eggs directly into the pan
  • Add salt and pepper to taste
  • Cover with a lid and cook for another 2-3 minutes until egg whites are cooked (you want to keep a runny yolk)
  • Serve straight away and sprinkle with coriander if using
