For 2-3 people:
- 1 white onion, peeled and diced
- 3 garlic cloves, diced
- 3 peppers of different colours chopped (I use already chopped frozen multi-colour peppers)
- 1 can of tomatoes (400 g)
- salt and pepper to taste
- 4 eggs
- ½ tsp cumin if you have
- ½ tsp chilli powder if you have
- olive oil spray
- fresh coriander if you like
